Lucky Girl.

That’s me.

I have four valentines.  What could be better than that?  Not much, let me tell you.  I have four men, from little to big that I get to love on all day long, it’s the best.  Although there are some things the littles can get away with that Yogi Dad cannot, like putting me in a headlock and sucking on my forehead (Judah) or getting really close to my face and giving a little headbutt (Wyatt) or…Lincoln’s got pretty acceptable modes of affection actually!

So this morning I was feeling a little apathetic, we slept in late, everyone was a little groggy and then it hit me…I’m the MOM!  It’s a holiday.  I’ve got to get my shit together!  No school today means no little Valentine’s cards.  And since this is a day yogi Dad and I celebrate with a big dinner out somewhere and not with gifts or cards or flowers, I had nothing for the boys.  No conversation hearts to nibble at all day, no red and pink cards to tear apart.   Nothing.

…not that they would notice if I did nothing, my God they are 2 and 6 months, but still.  What’s wrong with a little extra something, it’s not like we have plans today.  No school, just  hanging, working on our “turn-taking” and “hand-over-hand” play.  Just sitting around being awesome, you know the drill.  This is the fun part of being a stay at home mom!

So I’ve got to make breakfast anyway, and I’m probably going to make pancakes because it’s Monday and that’s the day I make pancakes.  So I can’t make the Red Velvet Pancakes I’ve been salivating over since Saturday morning because I have no eggs, but what I do have is chocolate chips and red food coloring.  I know, bad Mom with the red food coloring…but it’s Valentine’s Day!

So I whip up a batch of lovely pink chocolate chip pancakes cut into hearts, dusted with powdered sugar with a nice dollop of strawberry yogurt on the side.  I also used pink princess plates I have, you know..because it’s VALENTINE’S DAY!!!

We spent the rest of the day hanging out between episodes of Super Why (Why can I not time meals to happen before this show comes on? It’s their special show…and I can’t I just put in the DVD and be done with it?).  Which is why I had nothing thawed out for dinner when Yogi Dad got home from work.  I had a protein.  Tilapia.  I had nothing ready to go though, and we usually eat at 4:30 like a pack of senior citizens.

Enter one of my favorite Tilapia recipes of all time: Dijon Crusted Tilapia.  I had dinner on the table, from scratch, in under 40 minutes (I had to gently thaw the fish y’all!).  It was another amazing Mom moment.

Two in one day.  I’m not sure I can top that anytime soon.

Tomorrow…the laundry.  I’m sure it will be riveting.

    Pink plates with crowns and swirly things on them- my "princess" dessert plates. They are malmine though- classy class.
